Omg, I feel like I have had zero down time this week. There are about a million unread blogs in my Google reader (which will be read tomorrow at work) and a few DVRd shows that I need to catch up on. Homework has been ruling all of my free time!

OH! We got our professional wedding pictures today! 300+ pictures to document the biggest day of my life thus far. They turned out REALLY well. I’m loving them, our photographer did an amazing job! I’ll definitely post some of my favorites… eventually 🙂 I was looking at the pictures on the kitchen table tonight, and the kitten decided that it would be a good idea to jump on my back. So she did and luckily Jeremy was there to snap a picture! Oh… who am I kidding… shes totally not a kitten anymore 😦

One of my go-to meals is a southwestern pasta dish that I found a while ago. Its a simple and healthier comfort food. I usually make it on weeks when I dont know what else to make, or dont feel like taking the time to plan another meal. It also leaves us with a few days of leftovers which is awesome!

Southwestern Pasta

1lb ground turkey
1/2 cup frozen corn
1 can black beans, drained and rinsed
1T chili powder
1t Garlic powder
1t onion powder
1 box of whole wheat pasta
1 can diced tomatoes
2 cups cheddar jack cheese (or really any of your favorite cheese)
Bread crumbs

1. Preheat oven to 350
2. In a large skillet, brown ground turkey until no longer pink. Drain fat.
3. Return pan to heat and stir in spices, black beans, and corn. Cook until heated through
4. Meanwhile, prepare pasta according to package.
5. Once pasta is cooked, drain and add diced tomatoes, including juice, to pot
6. Add the meat mixture to the pasta and mix together. Stir in 1 cup of cheese.
7. Pour into greased 9×13 dish and spinkle remaining cup of cheese and bread crumbs on top
8. Bake for 30 minutes

Avocado Remoulade

Here is the recipe for the Avocado Remoulade that I made on Valentines day. It was delicious and very easy!
Adapted from Simply Recipes

2 large avocados, cut and peeled
3 Tbsp freshly squeezed lemon juice
3-4 Tbsp olive oil
1 Tbsp shallots, minced
1 teaspoon Dijon mustard (I actually used closer to 2 teaspoons, becuase I looove Dijon mustard)
Salt to taste

1. Put avocado pieces and lime juice into a food processor or blender and pulse until blended.
2. Slowly add olive oil, pulsing, until you reach a consistency you like.
3. Add minced shallots, pulse just until combined
4. Remove to a bowl, add mustard and salt to taste.

Microwave (non)meltdown

Im so excited that tomorrow is Friday! Our microwave decided to die randomly last night. We were trying to heat up dinner and suprise! After three minutes, the food was just as cold as it was when we put it in. More leftovers were on the menu for tonight, so I stuck them in a dish, threw it in the oven and we were back in business! Now we just need to get a new microwave 😦

Has anyone else seen the news that broke today about the sharp increase of strokes among the young and middle aged?? The greatest increase was 51% in males aged 15-34 since the 90s. Research presented at the American Stroke Association is targeting obesity as the catalyst for this rise. OMG… this is really scary to me. I mean, we all knew the obesity epidemic was bad… but wow… that is a huge increase! I’ve always thought strokes were something that happened to the elderly. Not anymore…

So week 1 of getting back into working out has gone pretty well! Especially considering that Wednesday morning was WAY icy around here and I was definitely not getting up at 530 to risk an accident to get into the gym. But, I still got 3 workouts in, which is on the low end of my goal of 3-5 workouts each week, but I’m ok with that! Shoot! I just realized that I didn’t go to the gym on Sunday, which I thought I did. So I only got in 2 workouts. I’m still ok with it, because, well, it can be hard to get back into it.

Yesterday I got up at the butt crack of dawn to work out before school. I did 45 minutes of cardio, 30 on the spin bike, 15 on the treadmill. This morning I lifted and went to Spin class.

Today we have a jam packed family day! My parents are driving in for a friends wedding and taking us out to lunch beforehand! Jeremys parents are also in town and so they are taking us and Jeremy’s sibling out for dinner! I love when family comes to visit!

Last night we went to visit my friend Katie in Philly.

She lives in a great neighborhood in the cutest little apartment. Our other friend Zach came too. The three of us are all in school, so we had a great time commiserating about homework and classes. We hung out for a while and drank good beer and then headed to New Delhi for an Indian Buffet! Which, in my opinion, is the best way to eat Indian food. I love being able to have multiple main dishes in one meal! I didnt get any pictures of dinner becuase I was too preoccupied having a great time with friends 🙂  After dinner we went to a pub for more beers and fun. Then Zach headed home and we went back to Katie’s and went to bed relatively early because… well… we’re getting old.

This morning we stopped at the Green Line Cafe on the way out of the city. A cute little cafe with good coffee and food. Jeremy got a breakfast burrito which he ate on the road and I had a blueberry muffin (which was too delicious for me to wait to take a picture of before I started eating it… oh well). YUM! Now we are home and relaxing a bit before I start making food for the week.

Nut Butter

Happy Saturday! I hate waking up early on weekdays, but I love waking up early on weekends. I can get so much done when I wake up early on Saturdays and its things that I want to do, opposed to things I have to do (i.e. work and school). This morning I went to the grocery store bright and early. I really love grocery shopping. Jeremy hates it. So its a win-win situation for both of us with me doing our weekly shopping. Does anyone else love grocery shopping? I just love looking at all the different products and thinking about what treats I can make. This morning I didnt find many amazing deals or anything, but I did get this new Kashi cereal that was on sale. Has anyone had it yet?

After grocery shopping I cleaned up the kitchen. For the past month, our kitchen/dining room has become the “catch all” for all of the empty boxes that were wedding/christmas gifts and also our old HUGE boob tube television. We got a new flat screen for christmas so its just been sitting in our dining room ever since. It feels soo good to have that space back!

I’ve been wanting to make my own nut butter for a while now. I couldn’t decide between Cashew and Almond, but eventually settled on Almond becuae the Cashews were double the price of the Almonds. The roasting almonds made our house smell so good! Eventually I will make Cashew butter, Cashews are my favorite nut!

Tonight we are heading into Philly to do dinner and drinks with two friends from college. Its like -56 degrees outside today (ok I might have exaggerated a bit, its actually 15 degrees) so we’ll be bundling up! Happy Saturday!

2 hour delay

I love 2 hour delays. I would totally be ok with them at least once a week. Except for the fact that my car looks like this:

Eh… it could be a lot worse! I took advantage of the extra time and was productive this morning! I slept in (which I consider productive :)), made pancakes, caught up on blogs, and cleaned the house. Oh, and cleaned up this:

The kitten has figured out how fun it is to unroll the toilet paper. Needless to say, the bathroom door will remain closed throughout the day today. Oh, its impossible to stay mad at her though. Shes too cute.

Ok off to school. I certainly don’t want to be late to Organic Chemistry. Bleh.
