I had a few goals for today: clean, go to the gym, run errands, study, make dinner. I accomplished all of them! The day started out with me waking up a little earlier than I really wanted to, which was totally fine becuase I got a head start on my house cleaning. Cleaning is one thing that definitely takes a backseat with everything else that I have to occupy my time these days. I mean, I keep the house relatively clean on a daily basis, but serious cleaning get pushed off to when I dont have impending exams or big projects, which with 18 credits, is a rarity. So, it felt REALLY good to do a good deep cleaning today.

Then I hit the gym for lifting and spin. I LOVE the instructor that teaches in the morning on MWF. I wish I could take her class all the time! I love the music she chose, and the routine was challenging but fun!

When I got home I stole some of Jeremy’s salad for lunch. He takes a small salad to work every day for his 11a.m. pre-lunch meal. Spinach, walnuts, dried cranberries, Gorgonzola and balsamic vinaigrette. Delicious!

After lunch I headed out for an afternoon full of errands… yaaay. Not! Errands are not my favorite thing. But, cooking is one of my favorite things and I made a delicious Indian dish tonight for dinner. A few weeks ago we went to a local Indian restaurant and I got the Chana Masala which is a curried chick pea dish. I haven’t stopped thinking about it since. SO I decided to make my own using this recipe. It turned out really good! I made it with brown rice, which is the only kind of rice in our house, and I was kind of wishing that I had made Jasmin rice to go along with it. Jasmin just seems a bit more authentic. Oh well, it was still awesome. 2 hours later, I’m not hungry, but I kind of want to heat up a small bowl to eat more!

There are tons of awesome spices in this recipe. I love how typical spices in Indian food are so colorful! There is also something I love about how turmeric leaves a yellow stain of anything it touches. It makes me feel warm and cuddly inside. I know, I’m weird. I just love it so much! Maybe because I know that I’m making something fantastic!

Weekender

What a lovely weekend! I almost forgot how enjoyable weekends are with no homework or studying!

Yesterday morning Jeremy and I met my parents at Shady Maple for breakfast. Shady Maple is a place that is best understood when experienced in person. It is a smorgasbord and quite the temple of gluttony. Their  breakfast will set you back about $10 and you get all the Pennsylvania Dutch food you can eat! They also have lunch and dinner buffets, but I have never been there for either. The amount of food that is put out (and ultimately goes to waste) is astounding. They have multiple kinds of breakfast meats — a few types of sausage, ham, bacon (which I have heard that their bacon is perfectly cooked,  however, I dont eat bacon so I dont know first hand), and scrapple. Made to order omelets, multiple kinds of pancakes made right before your eyes, a fruit bar, 2 pastry bars, oatmeal, potatoes, mush, etc. etc. etc. I could go on and on, but this is a pretty good sample.

I had a sweet potato pancake, which was AH-mazing! A scoop of cheesy hash browns, a biscuit smothered in sausage gravy, a chocolate covered doughnut, and a bowl of fruit. It was enough for both breakfast and lunch for me!

The line for the pancakes was super long and as I was waiting for my pancake, I couldn’t help but notice the plates of the people who walked by me. I got kind of grossed out seeing the sheer amount of unhealthy greasy, fatty food that was consumed. I allow myself to go to Shady Maple, MAAAYBE once a year. I eat very healthy most every day of the week so I am not worried about splurging every now and then. I don’t know if the same is true about the other people who were at Shady Maple. I am not gonna lie, part of me feels guilty for supporting a place that only provides fatty clog your arteries food (well, except for the fruit bar, but it wasn’t even fresh fruit, it was canned). Honestly, the only reason that I agreed to going was because it’s where my parents wanted to go. If anything, going to a place like this only confirms the eating habits that I practice.

After Shady Maple, we visited the grocery store that is attached to it. This grocery store has everthing! Their bulk foods section is one of the best that I have ever seen. I stocked up on oats, sunflower seeds, brown rice, and a few other things.

Today, we got our taxes done! I love taxes! I have always been lucky to get a refund, so tax time always feels a little bit like Christmas to me. After taxes was the gym, and then relaxing at home. Tonight is Sunday movie night and tomorrow I have lots of errands to run and new recipes to try! I LOVE SPRING BREAK!!

SPRING BREAK!!

WOOOO!!!

I know you are mesmerized by Jeremys…. assets. This was taken in Cancun on our honeymoon at a popular spring break spot. We didnt actually go in, just happened to be walking by.

I need this break SO badly. I’m honestly most excited about getting back in the kitchen to make some recipes that I’ve been dying to try, but havn’t had the time.

Jeremy and I started off the night by hitting up a diversity event at our local YWCA. Its first friday, so there are lots of thing going on in Lancaster City. For its size, Lancaster has a decent arts district. We decided to try a brand new restaurant, only to find out when we got there that their kitchen is actually not opening until April 1. So, plan B was to go to one of our favorite restaurant, Iron Hill Brewery.


I started out with a Chardonnay


Jeremy got a Sweet Leaf IPA

For dinner, I got the Mesculin Salad. It’s my favorite. Its a pretty standard mesculin salad, but it has pistachios on it. Which I LOVE.


And sweet potato fries. Duh. As if I could say no to sweet potato fries on any menu.


Jeremy got the South Philly Pizza which was roast pork with broccoli rabe and mozzarella. Their pizzas are AMAZING! He also got the Pomme Frittes which come with the most incredible garlic aoili dipping sauce.(Sorry about all the shadows in the pictures!)

Now its Jersey Shore time!! Happy Friday!!

Biggest Loser made me tear up tonight. Oh that show. It always gets me. Actually, this season hasnt been as tear inducing as some seasons. A few seasons ago, when Abby and Shay were on, I seriously cried every single episode. Their stories were just so touching! Biggest Loser is also a motivator for me to get in the gym. When I’m on the treadmill, sometimes I imagine Jillian screaming “LAST CHANCE WORKOUT” in my face. Its a great reason to run those extra few minutes.

The past few weeks have been so busy and stressful. School has been really demanding, and I really havnt been able to get in the kitchen and cook/bake anything super exciting. I’ve just been trying to get by with easy meals. Next week is Spring Break, though, and I have quite a few fun things in mind to experiment with in the kitchen!

Last night I whipped up some spaghetti and threw in some pesto and a few sun dried tomatoes. It was pretty tasty! Pesto is probably one of my favorite things. I want to plant Basil in our garden this summer so I can make my own.

Do any of you have your own garden? Jeremy and I planted one last year, but it really didn’t do much. I’ve heard that it can take a few years to build up the soil in a garden. So, maybe things will go better this year. I really hope so, because I want to be able to eat fresh veggies that I grew myself! Any gardening tips?

Ok, back to Biggest Loser. DVR is seriously the best inventions ever. I love being able to pause the show to finish up a blog post without missing a moment!

One of those days…

I am afraid today is going to be “one of those days.” Yes, its only 11:00, but I have already had numerous unfortunate things happen. I started the day by waking up at the crack of dawn to go to the gym. Which is great and I had a pretty good workout, but when I got back to the locker room to shower, I realized that I had forgotten to bring shampoo. Grrr. Of course, had I know that before, I would not have done as many reps while lifting in order to head home with enough time to shower at home. So, I hightailed it home to shower faster than I have ever showered before and jumped right back in my car to head to school. The drive to school was pretty typical and I actually made it to school around the same time I normally would. Not sure how that happend… So all is good… until I mistaken a relatively deep mud puddle as solid ground (well, semi solid as it is rainy and gross today), but its ok… I dont really like the shoes I’m wearing today anyway. I think this is pair number two that I have ruined in mud puddles this semester. Maybes its time to invest in some galoshes?? Not to mention they’re oh so trendy right now. So I make it to my 9am Anatomy and Physiology class, and all is good until I get up to leave at the end of class. I managed to bump the girl next to me sending her binder and pen flying. When did I become so clumsy?!

So that is my morning in a nutshell. Now I am hanging out in the library eating my exciting lunch!

(Please dont judge me by my straggly split ends. A haircut is definitely in my future!)

If you remember, the other day I was lamenting on how tired of Peanut Butter sandwiches I was. Today I brought a whole wheat wrap with hummus and yellow, orange, and red peppers in it. It was SO tasty! And such a nice change! I’ll definitely be bringing this to school again!

Now I’m off to Organic Chemistry. I think we are getting our exams back. EEK! I hope that my bad morning is not a sign of things to come! I hope everyone is having a better Monday than I am!

I would like to start out by saying that I am beyond stoked that at this time next week, I will be on spring break. I’m not going anywhere, I’m just excited to have a week off from school to rejuvenate! I definitely need it after last week and this week is going to be almost as busy. All that has been getting me through the last few days is that I will have an entire week off shortly. Spring break also means that the semester is halfway over… which is amazing!

Today I studied all morning and then hit up the grocery store and then came back home to write a paper. The paper actually came pretty easily until I was about 1/4 of the way until the length minimum when I was suddenly out of things to write about. By that point in the day, I was so tired of doing school work I just put it away. I’ll try to find something to fill up the last 1/4 page tomorrow. Maybe.

Then I started to get my lunches ready for this week. I cut up lots of peppers to put in whole wheat wraps with hummus. Definitely a good alternative to my standard peanut butter sandwich. I just hope it holds me over!

Then I made granola!

YUM! I cant wait to eat this tomorrow for breakfast!

While the granola was baking, I started cutting up veggies to make these veggie burgers. They turned out pretty good. The flavor was delicious, but I had a little bit of trouble molding them and frying them. But, by the end, I was getting the hang of it. Next time I try to make them, I’m sure it will go better.

Served with a side of wild rice pilaf!

Now Jeremy and I are settled in watching our standard Sunday night movie. I love this tradition that we have started!

Sweet and Sour

Oh I could look at these pictures all day. These two lovely ladies are my two Great Aunts. Aren’t they cute?!

I was too busy looking at wedding pictures (and studying) yesterday, that I forgot to post about my eats!

I tried my hand at making Kale chips for the first time. I would say it was a success!

Then we got take out from our favorite Vietnamese restaurant. I tried something new, and unfortunately, it was not a good decision. I got seasonal veggies with pineapple over rice. It did not have much taste and I was really disappointed because my “usual” is SO GOOD! I guess that is what I get for trying something new. The egg rolls were delicious, though.

Since my Vietnamese dinner was a bust last night, I wanted to try my hand at making my own tonight to make up for it. I made sweet and sour chicken (which, I don’t think is technically Vietnamese, but it was close enough) and it was awesome! The sauce was the perfect amount of sweetness without being too much.

Yellow bell peppers are definitely one of my favorite vegetables.

Well, its another Sunday night, and we’re watching another movie, as per usual. Tonight we’re watching LOTR Twin Towers. LOVE these movies!
