Today is Wednesday, one of my school days, and here I am sitting at home. From the hours of 7-10, however, I was sitting in my car, on a highway. You see, classes were not canceled, even though there were blizzard like conditions happening outside. I don’t mind driving in the snow, so I headed out assuming that if they were going to cancel classes, they would have done it by 7am since last week we had a two hour delay for a half an inch of snow. The roads were really pretty bad. At one point I was going 7.8 miles per hour according to my GPS and rarely got above 20 mph until I finally called the school to find out that they had, in fact, just canceled classes. I was already 3/4 of the way there. So I drove my butt home, put on sweats, and started baking!
The second I saw these little delights, I knew I had to bake them. They have about 15 minutes left and are filling my house with the most amazing scent. While waiting for the popovers to bake, I snacked on a whole wheat sandwich thin with peanut butter, agave, and cinnamon sugar. All that slow driving worked up an appetite, apparently.
