Something happened to me today that has not happened in quite a while. It was 10 oclock and I was at work when my stomach started to rumble (ok, so, THAT happens to me basically every day around 10am or so). I took my water cup into the staff lounge and got some water. While I was standing at the sink, I looked to my left, and there sat our little box of snacks that we can buy (a mini vending machine, if you will). Right smack in the front were the cheez-Its. I swear they spoke to me and told me that there was nothing in the world that could satiate my hunger like they could. Initially I thought they were right… and then I snapped out of it. Just to make sure, I picked up the Cheez-Its, read the nutrition facts and was validated (not that I really needed it) in my decision to abstain from the snack. I typically do not get tempted by exceedingly unhealthy processed snack foods in small bags. It was quite weird, actually. But, not as weird as this picture of Cheez-it lip gloss that I found like doing a google image search. I do like Cheez-Its, but lip gloss form? Sick. Luckily, I’m fairly certain its not real…
Then finally lunch came and I scarfed down leftover Chicken Tamale Casserole in 11 minutes. I always look at how long it takes me to eat my lunch, because I’m always done so quickly. I don’t think I have ever taken longer than 15 minutes to eat. Even if I distract myself with blogs or CNN.com. I ended my lunch
hour 11 minutes with two squares of dark chocolate.
I am completely exhausted right now! Yesterday I was at school for 11 hours and today I pulled a 10 hour day. Let me tell you, the couch never felt so good!
I made this Pumpkin Chocolate Chip bread a few days ago, but wanted to wait to post it because I had just posted about the Pumpkin Chocolate Chip Scones. I didnt want to overwhelm anyone with the delicious flavor combination of pumpkin and chocolate at the time, but I think you all are ready now. And I just ate the last piece, so this is kind of in memorium.
Pumpkin Chocolate Chip Bread
1.5 cups pumpkin, cooked and pureed
1.5 cups flour (or white whole wheat flour, if youre like me)
1.5 cups whole wheat flour
1 cup wheat germ
1 cup sugar
1 cup brown sugar
2 tsp. baking soda
1.5 tsp salt
2 tsp. ground cinnamon (optional)
1/2 tsp. each: ground ginger, nutmeg, cloves (optional)
4 eggs, lightly beaten
1/2 cup oil
1. Preheat over to 350 degrees
2. In a large bowl, mix together dry ingredients and make a well
3. Add all other ingredients into well and mix just until dry ingredients are moistened
4. Pour batter into 2 greased 9×5 inch loaf pans
5. Bake about 50 minutes, or until toothpick comes out clean (my loaves took about 60 minutes)
6. Cool in the pan on a wire rack for 10 minutes; turn the loaf out onto the rack to cool completely before slicing
